Milk‐Clotting Protease From Bacillus stercoris NCCP‐3139: A Potential Microbial Rennet for Cheese Production

The protease exhibited high catalytic selectivity, with a marked increase in milk‐clotting‐to‐proteolytic activity ratio (50–550)
