Carotenoid cleavage, catalyzed by Carotenoid Cleavage Dioxygenases (CCDs), forms various apocarotenoids that act as signaling molecules and plant hormone precursors. The rice Zaxinone Synthase (ZAS), an overlooked plant CCD subfamily, catalyzes the synthesis of apocarotenoid zaxinone in vitro.
