Gelatin is extracted from beef or pork. One of the potential sources of gelatin to be developed apart from land base mammalian is from poultry, namely duck bones. Gelatin extraction from duck bones can be carried out by the acid method. Several studies have reported that hydrolysis of gelatin using various types of enzymes will increase its bioactivity,

Metabolic shifts from growth to stress adaptation in Shanxi aged vinegar fermentation link flavor maturation and microbial cooperation, and Lactobacillus and Acetobacter form a self‐organizing metabolic network through division of labor. ABSTRACT Acetic acid fermentation (AAF) is a vital stage in the production of Shanxi aged vinegar (SAV), during ...

Mining Oral Probiotics Based on Their Pathogen Inhibition and Deodorization Roles
A promising oral probiotic strain Streptococcus salivarius MY‐6 stood out from 41 candidate lactic acid bacteria through the high‐throughput strategy based on its inhibitions of the growth and biofilm formation of the main oral pathogens Fusobacterium nucleatum and Porphyromonas gingivalis, as well as its elimination of oral malodor‐associated ...

The aim of this study was production and partial purification of α-amylase enzyme by Bacillus licheniformis. B. Licheniformis was allowed to grow in broth culture for purpose of inducing α-amylase enzyme. Optimal conditions for amylase production by B. Licheniformis are incubation period of 120 h, temperature of 37 °C and pH 7.0.
