Characterization of Volatile Organic Compounds and Warmed‐Over Flavor in Flat Peach Juice Through Thermal and Nonthermal Sterilization Using Integrated Flavoromics and Multivariate Analysis

open access: yesFood Science &Nutrition, Volume 14, Issue 4, April 2026.
Flat peach juice was subjected to thermal sterilization (high‐temperature sterilization and pasteurization) and nonthermal sterilization (high hydrostatic pressure and microwave sterilization). Volatile profiles and sensory attributes were characterized using HS–GC–IMS, HS–SPME–GC–MS, and bionic sensory evaluation.

Efficient production of acetoin by fermentation using the newly isolated mutant strain Lactococcus lactis subsp. lactis CML B4 [PDF]

open access: yes, 2017
With the aim of applying biotechnology to produce acetoin, a chemical that can be used as an aroma and as a building block for other compounds, several putative mutants with reduced lactic acid synthesis were obtained from a wild-type homolactic strain ...

Encapsulation of Cherry Laurel (Prunus laurocerasus) Extracts via Spray and Freeze Drying: Effects on Bioactive Compounds, Volatile Profile, and Physicochemical Properties of the Powder

open access: yesFood Science &Nutrition, Volume 14, Issue 4, April 2026.
Spray drying and freeze drying with different wall materials affected the physicochemical properties, bioactive compounds, volatile profile, and microstructure of encapsulated cherry laurel powders. ABSTRACT This study evaluated the encapsulation of cherry laurel (Prunus laurocerasus) fruit extracts by spray drying and freeze‐drying using gum arabic ...

Asymmetric desymmetrization of meso-diols by C(2)-symmetric chiral 4-pyrrolidinopyridines. [PDF]

open access: yes, 2012
In this work we developed C(2)-symmetric chiral nucleophilic catalysts which possess a pyrrolidinopyridine framework as a catalytic site. Some of these organocatalysts effectively promoted asymmetric desymmetrization of meso-diols via enantioselective ...

Microbial production of 2,3-butanediol for industrial applications

open access: yesJournal of Industrial Microbiology and Biotechnology, 2019
Abstract 2,3-Butanediol (2,3-BD) has great potential for diverse industries, including chemical, cosmetics, agriculture, and pharmaceutical areas. However, its industrial production and usage are limited by the fairly high cost of its petro-based production.

A Pilot Study on the Prevalence and Characterization of Multidrug‐Resistant Gram‐Negative Bacteria in Chicken and Pork Meat Around Kathmandu District, Nepal

open access: yesMicrobiologyOpen, Volume 15, Issue 2, April 2026.
This study investigated multidrug resistance in Gram‐negative bacteria from chicken and pork meat in Kathmandu, isolating 136 strains from 13 samples. Nearly half were multidrug resistant, highlighting contaminated meat as a potential route for zoonotic transmission and the need for antimicrobial resistance monitoring in Nepal.

Metabolic Engineering of Bacillus licheniformis for Production of Acetoin

open access: yesFrontiers in Bioengineering and Biotechnology, 2020
Acetoin is a potential platform compound for a variety of chemicals. Bacillus licheniformis MW3, a thermophilic and generally regarded as safe (GRAS) microorganism, can produce 2,3-butanediol with a high concentration, yield, and productivity.

Multi‐Solvent Suppression Ultrafast 2D COSY for High‐Throughput Wine Screening

open access: yesMagnetic Resonance in Chemistry, Volume 64, Issue 4, Page 416-426, April 2026.
An interleaved ultrafast COSY with multi‐solvent suppression was developed for wine analysis to overcome limitations often associated with 1D 1H NMR (signal overlap) and conventional 2D NMR (long acquisition times) methods. Within an acquisition time of ~20 min, it revealed hidden metabolite peaks and cross peaks for improved annotation and ...
