活性炭与树脂对芝麻ACE抑制肽脱苦的工艺优化 及其性能比较Optimization of debittering of sesame ACE inhibitory peptide by activated carbon and resin and their performance comparison

为改善芝麻ACE抑制肽的味道,分别采用活性炭与树脂对芝麻ACE抑制肽进行脱苦,以脱苦率、多肽损失率为评价指标,采用单因素实验和正交实验对两种脱苦工艺条件进行优化,并比较两种脱苦方法对芝麻ACE抑制肽味觉特性、活性及氨基酸组成的影响,以确定最适宜的脱苦方法。结果表明:两种方法均能使芝麻ACE抑制肽液苦味降至无法察觉,活性炭脱苦最佳工艺条件为活性炭2号添加量6%、芝麻ACE抑制肽液质量浓度10 g/100 mL、吸附温度55 ℃、吸附时间15 min,在此条件下脱苦率与多肽损失率分别为(96.46±0.57)

IGF‐1R promotes radioresistance by facilitating DNA‐PKcs recruitment to chromatin, enabling non‐homologous end‐joining (NHEJ) repair of double‐strand breaks. Inhibition or loss of IGF‐1R disrupts this recruitment to damage sites, driving compensatory reliance on microhomology‐mediated end‐joining (MMEJ) repair.
