Reducing Activity Level of Alliin

Bioscience, Biotechnology, and Biochemistry, 1996
Alliin has been reported to have antioxidative activity. We tried to reexamine the antioxidative activity of alliin with a purified alliin preparation, and found that it has no antioxidative activity in a linoleic acid oxidation system. The reducing activity of alliin tested by the ECD method was also weak in showing antioxidative activity.

A Simple Synthesis of Alliin and allo-Alliin: X-ray Diffraction Analysis and Determination of Their Absolute Configurations

Journal of Agricultural and Food Chemistry, 2015
A simple method for the isolation of the bioactive compound alliin from garlic, as well as a method for the synthesis of diastereomerically pure alliin and allo-alliin on a preparative laboratory scale, was developed. The absolute configuration of the sulfur atom in alliin and allo-alliin was assigned on the basis of enzyme reactivity, optical rotatory

Analysis of the diastereoisomers of alliin by HPLC

Talanta, 2012
Garlic has been known for its therapeutic effects for centuries and is used worldwide as a functional food. The concentration of the active molecules could be enhanced by a better knowledge of their biosynthesis. The precursor of these compounds, alliin (a sulfur amino-acid) has been obtained by chemical synthesis.

Biosensoric detection of the cysteine sulphoxide alliin

Sensors and Actuators B: Chemical, 2003
Abstract Garlic ( Allium sativum L.) and related species of the Alliaceae family are known for their cancer-protecting and antiatherosclerotic potential. The bioactivity of these plants is related to organo-sulphur compounds, mainly alliin. In the present investigation, an alliin-specific biosensor exploiting immobilised alliinase (EC 4.4.1.4) has

Physiologically Beneficial Actions of Alliin in Health and Disease

Current Nutraceuticals, 2022
Background: Garlic has been considered to have medicinal properties in different cultures since ancient times. Vegetables of the allium genus are a natural source of sulfur-containing organic compounds. These compounds have recently been investigated for their positive health effects, such as antioxidant and anti-inflammatory, as well as ...
