Thermolysis kinetics and thermal degradation compounds of alliin

Food Chemistry, 2017
To investigate thermolysis kinetics and identify degradation compounds, alliin solutions were heated at 60, 80, and 89°C. The degradation compounds of alliin were identified by high performance liquid chromatography-mass spectrometry (HPLC-MS), tandem mass spectrometry (MS/MS) and ultra-pressure liquid chromatography-high resolution mass spectrometry ...

A spectrophotometric assay for allicin, alliin, and alliinase (alliin lyase) with a chromogenic thiol: reaction of 4-mercaptopyridine with thiosulfinates

Analytical Biochemistry, 2002
Allicin (diallylthiosulfinate) is the best known active compound of garlic. It is generated upon the interaction of the nonprotein amino acid alliin with the enzyme alliinase (alliin lyase, EC 4.4.1.4). Previously, we described a simple spectrophotometric assay for the determination of allicin and alliinase activity, based on the reaction between 2 ...

Alliin alleviates myocardial ischemia-reperfusion injury by promoting autophagy

Biochemical and Biophysical Research Communications, 2019
Alliin is an important organosulfur compound derived from garlic. In this study, the role of alliin in myocardial ischemia-reperfusion (I/R) injury and its underlying mechanisms were investigated. Treatment with alliin significantly reduced the area at risk and the infarct area in a mouse model of I/R injury.

Alliin Lyase (Alliinase) from Garlic (Allium sativum)

Applied Biochemistry and Biotechnology, 1994
The garlic plant (Allium sativum) alliinase (EC 4.4.1.4), which catalyzes the synthesis of allicin, was purified to homogeneity from bulbs using various steps, including hydrophobic chromatography. Molecular and biochemical studies showed that the enzyme is a dimer of two subunits of MW 51.5 kDa each. Its Km using synthetic S-allylcysteine sulfoxide (+

Über Alliin, die genuine Muttersubstanz des Knoblauchöls

Experientia, 1947
The authors have succeeded in isolating alliin in a pure, crystalline form and in defining its properties. Alliin is characteristic for certain kinds of garlic; it contains sulphur and nitrogen and represents the initial substance of garlic oil. Alliin itself has no bactericidal action.

Alliin in the garlicky taxon Adenocalymma alliaceum (Bignoniaceaei)

Phytochemistry, 1981
Abstract Dried leaves of Adenocalymma alliaceum (Bignoniaceae) contain alliin [( S )- S -allyl- l - cysteine S -oxide], previously known only from Allium species, and an endogeneous enzyme catalyzing the degradation of alliin to give diallyl disulphide, diallyl trisulphide and diallyl tetrasulphide as stable end products.

Liquid chromatographic determination of alliin in garlic and garlic products

Journal of Chromatography A, 1988
A liquid chromatographic (LC) method is proposed for the determination of alliin in garlic and garlic products. The method involves heating of the sample with water in a bath of boiling water followed by homogenization and centrifugation. Interfering components are eliminated by use of a Sep-Pak C18 cartridge as a clean up step before injection. The LC

Synthesis of the flavour precursor, alliin, in garlic tissue cultures

Phytochemistry, 2005
The path of synthesis of alkyl cysteine sulphoxides, or flavour precursors, in the Alliums is still speculative. There are two proposed routes for alliin biosynthesis, one is from serine and allyl thiol while the other is from glutathione and an allyl source via gamma glutamyl peptides.

In silico investigation of Alliin as potential activator for AMPA receptor

Biomedical Physics & Engineering Express, 2021
Abstract Natural products from plants, such as flavonoids, arouse immense interest in medicine because of the therapeutic and many other bioactive properties. The molecular docking is a very useful method to screen the molecules based on their free binding energies and give important structural suggestions about ...
