Comparative Analysis of the Effects of Different Cooking Methods on the Flavor and Nutritional Composition of Pepper (Capsicum annuum L.)

open access: yesFuture Postharvest and Food, EarlyView.
Different cooking methods (pan‐frying with oil and pan‐frying without oil) will affect the flavor and nutrition of chili fruit. Pan‐frying with oil diminishes the original flavor and nutritional value of peppers, whereas pan‐frying without oil enhances the nutritional quality and preserves the freshness of peppers.

Electroacupuncture reshapes the microbial co‐occurrence networks related to the behavioral and psychological symptoms of dementia in Alzheimer's disease

open access: yesiMetaOmics, EarlyView.
Microbial keystone species and gut microbiota composition are highly variable during the pathological development of the behavioral and psychological symptoms of dementia (BPSD) in Alzheimer's disease (AD). Age stratification reveals stage‐specific gut microbial signatures in AD‐related BPSD.

Phage‐mediated horizontal transfer of Salmonella enterica virulence genes with regulatory feedback from the host

open access: yesiMeta, EarlyView.
In this study, we found evidence of phage‐mediated horizontal transfer of virulence genes in Salmonella enterica in global habitats from a molecular evolutionary perspective. Notably, csrA, a global regulator in Salmonella enterica, curbed horizontal gene transfer by inhibiting the cyclization and release of prophage.

From shake flasks to a bench‐scale bioreactor: scaling up exopolysaccharide production in fed‐batch cultivation of Ensifer meliloti SEMIA 135

open access: yesJournal of Chemical Technology &Biotechnology, EarlyView.
Abstract BACKGROUND This study investigates the production scale‐up of exopolysaccharide (EPS) by Ensifer meliloti SEMIA 135 from shake flasks to a 5 L bench‐scale fed‐batch bioreactor. Soybean molasses was the cost‐effective nutrient source. The primary aim was to improve conditions for maximizing EPS yield and minimizing production costs.

Sustainable Shell Formulations as Alternative to the Conventional Soft Gelatin Capsules in Pharmaceutical and Nutraceutical Applications. A Review.

open access: yesMacromolecular Materials and Engineering, EarlyView.
In soft capsules (SCs), four crucial factors can modify the properties of the shell: the shell formulation, its interaction with the fill material, the SC production and its storage conditions. Gelatin is the most used gelling agent for SCs nowadays, but they have some drawbacks which can be solved including other alternative polymers in the shell ...

Practical Applications of Secondary/Extractive Electrospray Ionization (SESI): A Versatile Tool for Real‐Time Chemical Analysis

open access: yesMass Spectrometry Reviews, EarlyView.
ABSTRACT In the 1980s, researchers discovered the remarkable ability of electrospray plumes to effectively ionize gas‐phase molecules via secondary ionization. Around 20 years later—coinciding with the ambient mass spectrometry revolution—secondary electrospray ionization (SESI) and extractive electrospray ionization (EESI) coupled to mass spectrometry
