Research on the Extraction Process of Water-Soluble Asparagus Powder and Removal of Free Radical
Applied Mechanics and Materials, 2013The optimum extraction condition of water-soluble asparagus powder through water boiling method is to extract it twice, in the first extraction, 8% is set as the solid-liquid ratio, 15 minutes is set as the soak time and 40 minutes is set as the boiling time; in the second extraction, 10% is set as the solid-liquid ratio, 40 minutes is set as the ...

Effect of fortification with asparagus powder on the qualitative properties of processed cheese [PDF]
The qualitative properties of processed cheese (PC) fortified with different levels of asparagus powder (AP) (0.5%, 1% and 1.5% wt/wt) were evaluated during storage. AP decreased the pH and lipolysis indexes and increased the phenolic content, antioxidant activity and proteolysis of the processed cheeses.

Abstract By-products from asparagus processing plants exhibit similar phytochemical profiles to the edible part. Processes used to reduce the size of such by-products prior to their use, however, generally result in final products of inferior quality, due mostly to heat generated during the processes.

Maltodextrin improves physical properties and volatile compound retention of spray-dried asparagus concentrate [PDF]
Traditional hot air drying of asparagus is known to lead to a powder with a poor aroma profile. We here concentrated asparagus juice into asparagus concentrate (21.7% w/w) and spray-dried it with maltodextrin DE12 as carrier agent to improve the volatile
