Characterization of two low-potential cytochromes from bean sprouts
Biochimica et Biophysica Acta (BBA) - Bioenergetics, 1993Two cytochromes have been isolated from chlorophyll-free bean sprouts, purified and characterized. The more abundant cytochrome was purified to apparent homogeneity and exhibits visible region absorbance maxima at 416, 520 and 550 nm in the reduced form and at 410 and 530 nm in the oxidized form.

Polyamines regulating phytic acid degradation in mung bean sprouts
Journal of the Science of Food and Agriculture, 2018AbstractBACKGROUNDPolyamines are essentially involved in cell division and differentiation. Transport of polyamines is adenosine triphosphate (ATP)‐dependent, while phytic acid is the major reserve of phosphate essential to the energy‐producing machinery of cells. Thus polyamines might enhance phytic acid degradation during mung bean germination.

The Southeast Asian journal of tropical medicine and public health, 1993Detection of Salmonella spp. in 344 samples of bean sprouts was attempted by pre-enriched in buffered peptone water (BPW) or lactose broth (LB) at 37 degrees C, followed by selective enrichments, selenite cystein broth (SCB) and Rappaport medium (RV) at 43 degrees C.
