Mechanical Characterization of Acidic Casein Gels From Micellar Casein Powder: Influence of Lactose and Sucrose

Two‐stage linear force–displacement curves reveal that networks of acidic casein gels made of MC–powder are strengthened with increasing sugar content and a sugar peak appears. The system dynamics analysis decomposes this peak into an elastic sugar–protein interaction, likely due to weak hydrogen bonds, and a viscous gel network component.

X‐Linked USP11 Drives Depression‐Like Behaviors by Stabilizing CK2α and Disrupting Mitochondrial Function

This study reveals that USP11 mediates depressive‐like behaviors and mitochondrial dysfunction in the prefrontal cortex. Mechanistically, USP11 directly binds to and deubiquitinates CK2α, thereby stabilizing its protein level and promoting mitochondrial impairment.

Structural Characterization of Ginseng Adventitious Root Polysaccharides and Their Effects on Ameliorating Insulin Resistance

Purified ginseng adventitious root polysaccharides (GARP) improve insulin resistance by enhancing glucose and lipid metabolism and reducing oxidative stress. These beneficial effects are mediated, at least in part, through activation of the Nrf2/Keap1 signaling pathway in cellular and animal models.
