Core–Shell Droplet Generation in an On‐Chip Temperature Gradient
European Journal of Lipid Science and Technology, EarlyView.We present a microfluidic device and associated heating–cooling setup for the generation of glycerol monostearate (GMS)‐coated oil droplets. Droplets are generated on‐chip by flow focusing at 60°C, followed by rapid cooling to 6°C. The generated particles range in size from 13 to 49 µm and remain stable for several days at 4°C.
