Effects of Kudoa thyrsites on Proximate Composition and Texture of Merluccius capensis and Zeus capensis

open access: yesJournal of Fish Diseases, Volume 49, Issue 6, June 2026.
ABSTRACT Kudoa thyrsites is a myxosporean endoparasite that infects fish, frequently resulting in myoliquefaction, impacting the texture and eating quality of fish muscle. The aim of this study was to investigate the effects of K. thyrsites infection on the proximate composition and texture parameters of raw fillets from two South African economically ...

Multidimensional Quality Assessment of Duck Breast Meat Subjected to Different Thermal Cooking Methods: Physicochemical, Microbiological, Sensory, Mineral and Microstructural Insights

open access: yesJournal of Food Process Engineering, Volume 49, Issue 6, June 2026.
Different thermal processing methods significantly influenced the physicochemical, sensory, microbiological, mineral, and microstructural properties of duck breast meat. Sous‐vide best preserved moisture, structural integrity, and oxidative stability, whereas charcoal grilling provided superior sensory quality and consumer acceptability.

Impact of diet, dissolved oxygen concentration, and stocking density on channel catfish (Ictalurus punctatus) production performance

open access: yesJournal of the World Aquaculture Society, Volume 57, Issue 3, June 2026.
Abstract Diet selection, stocking density, and target levels for dissolved oxygen concentration are three of the major management decisions made by aquaculture producers. These factors and their combinations were tested in channel catfish (Ictalurus punctatus) to determine their relative impact on food conversion ratio (FCR), growth performance, and ...

Update of the risk assessment on dioxins and dioxin‐like PCBs in feed and food

open access: yesEFSA Journal, Volume 24, Issue 6, June 2026.
Abstract The European Commission asked EFSA to update its 2018 risk assessment on polychlorinated dibenzo‐p‐dioxins and dibenzofurans (PCDD/Fs) and dioxin‐like polychlorinated biphenyls (DL‐PCBs) in feed and food, based on the 2022 WHO Toxic Equivalency Factors (WHO2022‐TEFs).

Safety evaluation of a food enzyme containing oryzin and leucyl aminopeptidase activities and a heat‐treated food enzyme containing only leucyl aminopeptidase activity from the non‐genetically modified Aspergillus sp. strain FL 72‐230

open access: yesEFSA Journal, Volume 24, Issue 6, June 2026.
Abstract This assessment addressed two food enzymes produced with the non‐genetically modified microorganism Aspergillus sp. strain FL 72‐230 by Shin Nihon Chemical Co., Ltd. The native food enzyme contains leucyl aminopeptidase (EC 3.4.11.1) and oryzin (EC 3.4.21.63) activities.
