メロンの食味評価を目的として糖度を非破壊測定する場合に,目標とする測定精度を明らかにするたあ,官能検査により消費者の甘みの識別能力を検討した.同じ糖度のメロンでも,果肉硬度の低い方が甘みが強く判断されたため,果肉硬度が甘みの評価に影響するものと考えられた.そのため,果肉硬度が同じメロンを用いて検討したところ,甘みの強さを明確に識別できる糖度の差は約1.5度であつた.
