Food Science &Nutrition, Volume 13, Issue 2, February 2025.The study investigated the phenolic composition, ash contents, and antioxidant capacities of 18 Turkish indigenous wheat varieties. Results showed that dicoccum genotypes have the highest soluble free and conjugated phenolics, while aestivum is rich in insoluble bound, total phenolic, and total flavonoid contents.
