Experientia, 1977Specific chemical assays, including carbohydrate, hexosamines and hexuronic acid, were determined on the lens insoluble albumoid. It was noticed that the carbohydrate composition varies with age. The significance of carbohydrate in the lens is discussed.

Journal of Food Composition and Analysis, 1989Abstract Cucurbit seed kernels of musk melon, water melon, and pumpkin were analyzed in detail for their carbohydrate composition. Carbohydrates of cucurbit kernels are 4.0–5.3% simple sugars, 1.2–1.4%n starch, and 6.0–7.0% unavailable carbohydrates.

Carbohydrate composition of potatoes. Pectin content
American Potato Journal, 1957A colorimetric procedure for extracting and determining pectin in fruits was modified for analysis of potatoes. Pectin contents of different varieties and lots were determined. Results show that there was little difference in the pectin content of tubers from the varieties studied.
