Evaluation of Carcass Scraping to Enumerate Bacteria on Prechill Broiler Carcasses

open access: yesPoultry Science, 2007
Experiments were conducted to evaluate a scraping method for enumerating bacteria on broiler carcasses. In experiment 1, coliforms and Escherichia coli were determined by the whole-carcass rinse (WCR) method and by scraping the skin surface and rinsing the blade (BR).

Carcass composition and yield of 1957 versus 2001 broilers when fed representative 1957 and 2001 broiler diets.

open access: yesPoultry Science, 2003
The yield of carcass parts as well as levels of carcass fat, moisture, and ash were measured in the 1957 Athens-Canadian Randombred Control (ACRBC) and in the Ross 308 commercial broiler, when fed diets that were representative of those being fed during ...

Effect of Using Nisin and Ethylenediaminetetraacetic Acid on the Bacterial Load, Deterioration Criteria, and Sensory Attributes of Chilled Chicken Cuts

open access: yesFood Safety and Health, EarlyView.
Evaluation of the efficacy of selected dipping solutions on fresh chicken meat shelf life. Samples treated with nisin and EDTA combinations, followed by chilled storage. The effectiveness of these interventions was assessed through bacteriological, sensory, and physicochemical (pH) deterioration criteria.
