Electrophoretic mobility of casein micelles
Journal of Dairy Research, 1979SummaryA simplified moving boundary electrophoresis technique has been developed for the measurement of the electrophoretic mobility of casein micelles. The zeta potentials of casein micelles from different skim-milk samples were calculated using Henry's equation and shown to decrease with decrease in pH between pH 6.9 and 5.3 and to increase with ...

Casein sub-micelles: do they exist?
International Dairy Journal, 1999The model of the casein micelle as a roughly spherical, fairly swollen particle of about 100 nm diameter with a hairy outer layer, is now generally accepted. Several workers have further assumed that the core of the micelle is built of sub-micelles, i.e., roughly spherical units of about 14 nm diameter, which are fairly tightly aggregated.

A phosphate-induced sub-micelle-micelle equilibrium in reconstituted casein micelle systems
Journal of Dairy Research, 1979SUMMARYIn reconstituted casein systems, complete sub-micelles were previously observed only under extreme conditions of ionic strength, namely a NaCl concentration of 2 M or greater. However, studies with the analytical ultracentrifuge on phosphate-containing casein systems revealed that under certain conditions, a stable sub-micelle-micelle ...

Turbidity study of casein micelles
1992Abstract Casein micelles of different sizes were prepared by centrifugation and the distribution of particle sizes was analyzed by turbidity measured with a conventional visible spectrophotometer. The molecular weight and the diameter of casein micelles determined by turbidity correlated fairly well to the centrifugation speeds.
