Basophil allergen threshold sensitivity to casein (casein‐specific CD‐sens) predicts allergic reactions at a milk challenge in most but not all patients

open access: yesImmunity, Inflammation and Disease
Background The basophil activation test is an emerging clinical tool in the diagnosis of cow's milk allergy (CMA). The aim was to assess the association between the basophil allergen threshold sensitivity to the major milk protein casein (casein‐specific

Milk lacking α-casein leads to permanent reduction in body size in mice.

open access: yesPLoS ONE, 2011
The major physiological function of milk is the transport of amino acids, carbohydrates, lipids and minerals to mammalian offspring. Caseins, the major milk proteins, are secreted in the form of a micelle consisting of protein and calcium-phosphate.We ...

Digestomics of Cow’s Milk: Short Digestion-Resistant Peptides of Casein Form Functional Complexes by Aggregation

open access: yesFoods, 2020
The aim of this study was to identify short digestion-resistant peptides (SDRPs) released by pepsin digestion of the whole cow’s milk and examine their IgE reactivity and allergenicity. Raw milk was subjected to simulated gastric digestion.

Immobilization of bromelain on cobalt-iron magnetic nanoparticles (CoFe2O4) for casein hydrolysis

open access: yesRevista Colombiana de Química, 2020
By means of recycling an enzyme, bromelain was used in casein hydrolysis facilitated by a nanobiocatalyst consisting of bromelain, CoFe2O4 magnetic nanoparticles, chitosan, and glutaraldehyde.

On the Each Casein Fraction of Casein Micelle and Soluble Casein in Colostrum

open access: yesNihon Chikusan Gakkaiho, 1974

Casein. IX. Carbohydrate Moiety of κ-Casein

open access: yesJournal of Dairy Science, 1970
Abstract Glycopeptides from pronase digests of κ -casein had different molecular weights but contained equimolar amounts of galactose, N-acetyl galactosamine, and sialic acid. The constitution of the carbohydrate moieties of the glycopeptides was investigated by enzymie hydrolysis, periodate oxidation, and alkaline degradation.
