Innovative Non‐Releasing Polyphenol Systems as a New Strategy Against Rosé Wine Oxidation

open access: yesFood Frontiers, Volume 7, Issue 2, March 2026.
An innovative system was developed to covalently immobilize polyphenols from grape must on chitosan beads. The resulting beads, containing stable and non‐releasing polyphenols, were applied to rosé wine under oxidative stress. This strategy enhanced rosé wine color stability and oxidation, offering a valuable alternative to sulfur dioxide.

Insect‐Derived Bioactives for Glycemic Control and Gut Health: A Review

open access: yesFood Frontiers, Volume 7, Issue 2, March 2026.
Insect‐derived bioactive compounds (e.g., peptides, polysaccharides) effectively regulate blood glucose through dual mechanisms: directly inhibiting carbohydrate‐digesting enzymes and glucose transporters, and indirectly modulating gut microbiota to enhance intestinal barrier integrity.

Unravelling Rheology and Structural Properties of Polysaccharides from Porphyridium Purpureum After Alkali Pre‐Treatment

open access: yesMacromolecular Bioscience, Volume 26, Issue 3, March 2026.
Porphyridium purpureum polysaccharides are established hydrocolloids among several microalgal biomolecules, however they only exhibit higher viscosity without gelling capacity. Therefore, this study chose to employ alkali pretreatment to Porphyridium purpureum to investigate whether controlled chemical modification could alter the molecular structure ...

Designing Protein Gels for Nutrient Delivery: From Formulation to Digestion

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 2, March 2026.
ABSTRACT Protein gels have diverse applications in food industry, with plant proteins as potential alternatives to animal‐derived products. The applications of protein gels mainly depend on gel properties while gel digestibility affects the delivery and release of nutrients. However, the relationship and synergistic influences among gelation mechanism,

Anticancer and Anti-Inflammatory Properties of Chitin and Chitosan Oligosaccharides

open access: yesJournal of Functional Biomaterials, 2015
Previous reports indicate that N-acetyl-d-glucosamine oligomers (chitin oligosaccharide; NACOS) and d-glucosamine oligomers (chitosan oligosaccharide; COS) have various biological activities, especially against cancer and inflammation. In this review, we
