Ultrafine food powders as clean-label flow additives

open access: yesFrontiers in Chemical Engineering
The aim of this work was to demonstrate the potential of the concept of clean-label-capable flow additives. These are spray-dried food ingredients whose particle size is small enough (<10 µm) to take over the function of classic flow additives such as

Molecular characterization of covRS mutations in M1UK Streptococcus pyogenes

open access: yesFEBS Open Bio, EarlyView.
Group A Streptococcus (GAS) acquires covRS mutations driving a hypervirulent bacterial state, frequently associated with invasive disease‐like necrotizing fasciitis. We demonstrate that the newly emerged M1UK GAS lineage can also acquire these mutations.

Clean-label backdoor attack on link prediction task

open access: yesCybersecurity
Graph Neural Networks (GNNs) have shown excellent performance as a powerful tool on link prediction task. Recent studies have shown that link prediction based on GNNs is vulnerable to backdoor attacks.

Lactic Acid Bacteria Fermentation as a Tool for Creating Texture in Plant-Based “Clean-Label” Cheeses

open access: yesFermentation
The growing demand for clean-label plant-based cheese alternatives underscores the need for products with desirable properties. A key technological challenge is replicating the firmness of traditional cheese without synthetic additives.

A new flow chip in combination with multiphoton microscopy as a protocol for longitudinal 3D imaging of tissue calcification under shear stress

open access: yesFEBS Open Bio, EarlyView.
Miniaturized flow chip platform enabling continuous perfusion and longitudinal multiphoton 3D imaging of vascular smooth muscle cell constructs under physiological flow. Brightfield imaging guides region selection, while CellTracker Green and mRuby‐labeled fetuin‐A visualize cells and mineral deposition, respectively. Magnesium supplementation markedly

SplitNet: Learnable Clean-Noisy Label Splitting for Learning with Noisy Labels

open access: yesInternational Journal of Computer Vision
Abstract Annotating the dataset with high-quality labels is crucial for deep networks’ performance, but in real-world scenarios, the labels are often contaminated by noise. To address this, some methods were recently proposed to automatically split clean and noisy labels among training data, and learn a semi-supervised learner in a Learning ...

Narcissus: A Practical Clean-Label Backdoor Attack with Limited Information

open access: yes, 2023
Backdoor attacks introduce manipulated data into a machine learning model's training set, causing the model to misclassify inputs with a trigger during testing to achieve a desired outcome by the attacker. For backdoor attacks to bypass human inspection,

Umami and saltiness enhancements of vegetable soup by enzyme-produced glutamic acid and branched-chain amino acids

open access: yesFrontiers in Nutrition
IntroductionOne major challenge of reducing salt content in food is the risk of the overall taste becoming bland. Enhancing saltiness is an effective strategy for salt reduction, and the development of salt-reduced foods using these saltiness-enhancing ...

Dose‐dependent hepatotoxicity of hydrogen peroxide in HepG2 cells and its modulation by CYP450 induction

open access: yesFEBS Open Bio, EarlyView.
NMR metabolomics revealed concentration‐dependent metabolic perturbations in HepG2 cells exposed to H2O2. Rifampicin pretreatment enhanced metabolic competence, attenuated toxin‐induced alterations and produced metabolite profiles more consistent with human liver physiology, supporting the use of CYP450‐induced HepG2 models for improved in vitro ...
