Assessment of milk pasteurisation in artisanal cheeses using colorimetric analysis: A novel approach
International Journal of Dairy Technology, Volume 79, Issue 2, April–June 2026.CIELAB b* was applied as a novel quantitative parameter to assess alkaline phosphatase. ALP activity in raw milk cheeses declined during maturation. Aqueous extraction distinguished raw and pasteurised cheeses, showing practical value.
