Studies of creep compliance behavior of aqueous solutions of egg yolk lipoproteins indicate formation of viscoelastic films at n-heptane and n-hexane interfaces. Rheological parameters are reported. At other interfaces: water–air, water–cyclohexane, water–paraffin oil—the films were purely viscous.
