This paper presents a facile method for the conversion of N‐acetylglucosamine (NAG) to 3‐acetamido‐5‐acetylfuran (3A5AF), a potential platform chemical, within protic ionic liquid systems. Reaction optimization, 3A5AF isolation, green metrics and the recyclability and scalability of selected systems are discussed.

A Proton Magnetic Resonance Study of the Association of Lysozyme with Monosaccharide Inhibitors [PDF]
It has been shown that the acetamido methyl protons of N-acetyl-d-glucosamine undergo a chemical shift to higher fields in their proton magnetic resonance spectrum when the inhibitor is bound to lysozyme.

Chitosan and cinnamon oil reduced film thickness and improved water vapor barrier properties. Cinnamon oil in yam starch films showed strong antibacterial activity against E. coli and S. aureus. Yam starch films with chitosan and cinnamon oil effectively inhibited fungal growth on strawberries.
