Food Science &Nutrition, Volume 14, Issue 4, April 2026.This study provides integrative epidemiological and mechanistic evidence linking acrylamide exposure to muscle mass index. Analysis of NHANES 2013–2016 data showed that higher HbAA levels were associated with lower muscle mass index, whereas a higher HbGA/HbAA ratio was positively associated.
