Effect of degree of esterification on viscosity and gelation behavior of pectin
Journal of Colloid Science, 1953Abstract Pectin was esterified with diazomethane so that degradation did not occur. The intrinsic viscosity was found to decrease with increasing degree of esterification. Maximum shear modulus of high-solids content gels containing 0.3 % pectin of nearly constant chain length was obtained near a degree of esterification of 40%.

Fast determination of the degree of methyl esterification of pectins by head-space GC
Food Hydrocolloids, 2004A new, fast method for the quantitative analysis of methoxyl groups in pectin using head-space gas chromatography (HS-GC) has been developed. With this method, results were obtained which were in reasonable agreement with the conventional HPLC method, and the reproducibility of the measurements is high.
