Dextran synthesis by immobilized dextran sucrase

Dextran sucrase has been produced by fermentation of Leuconostoc mesenteroides NRRL B-512, with and without continuous sucrose addition to improve enzyme production. The enzyme preparation has been concentrated from the fermentation broth by ultrafiltration and purified by gel permeation chromatography on Ultrogel.

Abstract It was shown that dextran produced by the strain SF-4 Leuconostoc Mesenteroides is a crystalline polymer with a glass transition temperature of 140° and flow temperature of 180° Treatment of dextran with water and formamide results in crystallization of the polysaccharide and reduces the temperature of crystallization.
