Gelling properties of extruded yam ( Dioscorea alata ) starch

Yam (Dioscorea alata) starch was pregelatinized in a single screw extruder. Response Surface Methodology was used to study the effect of extrusion variables: feed moisture (18, 21, 24%), extruder temperature (120, 150, 180°C) and die diameter (3, 4, 5 mm) on cold viscosity, gel-forming capacity and retrogradation of extruded starches.

Occurrence of hexaploid males in Dioscorea alata L.

In the polyploid species Dioscorea alata, earlier studies have shown a prevalence of higher ploidy levels (2n = 60 and 80) restricted among female clones. Cytological screening of a number of rare flowering collections maintained at the CTCRI revealed the occurrence of hexaploids (2n = 60) among male clones for the first time.

Floral biology of Dioscorea alata L. was studied. Anthesis occurred in male flowers by 12.30 h and in female flowers between 13.00 h and 14.30 h. Male flowers remained open for 4–5 hours and female flowers for 9–11 days.

Transformation associated with catecholase in Dioscorea alata during storage

Abstract The Michaelis constant of catecholase in 3 cultivars of Dioscorea alata was determined. Oxidative browning was related to the activity of the enzyme in the yams. Inhibition by cysteine was competitive, while 2-mercaptoethanol caused an uncompetitive type of inhibition.

Unusually stable monoacylated anthocyanin from purple yam dioscorea alata

Abstract Alatanin C isolated from the tuber of purple yam Dioscorea alata . is the first discovered unusually stable monoacyalated anthocyanin in nuetral aqueous solutions. The stability is ascribed to the intramolecular stacking of sinapic acid and to the chiral self-association of anthocyanidin nuclei.
