Melon (Cucumis melo L. var. Cantaloupe) is classified as a climacteric fruit, which means its quality deteriorates quickly after harvest. Early‐harvested melons often exhibit inferior color quality and lower sugar content but have a longer shelf life than those harvested later.

The chemical structure of kaki-tannin from immature fruit of the persimmon (Diospyros kaki L.).

A partially purified tannin was prepared by a K2HP04-precipitation method from immature persimmon fruit (Diospyros kaki L., cv. “Hiratanenashi,” astringent type).
