Effects of frying and baking processing conditions changes on biogenic amines and volatile components in Jumbo squid (Dosidicus gigas)

open access: yesApplied Food Research, 2022
This study aimed to investigate the effect of temperature and time changes in two typical thermal processing procedures, frying and baking, on squid quality. Increasing the frying/baking temperature and prolonging the time significantly impacted color, L*

Softening of Jumbo Squid Dosidicus gigas via Enzyme Injection

open access: yesFisheries and aquatic sciences, 2015
We developed a new softening technology applicable to the main body of the jumbo squid Dosidicus gigas; this will aid in squid consumption by elderly individuals and those who have masticatory and dysphagia problems. Protease solutions were injected into jumbo squid and hardness was measured using a texture analyzer. Seven enzymes were tested.

Fatty Acid Profile of Jumbo Squid (Dosidicus gigas) off the Peruvian Exclusive Economic Zone: Revealing the Variability of Feeding Strategies

open access: yesFishes, 2022
Jumbo squid Dosidicus gigas play a critical role in the marine ecosystems and are an important commercial species in the East Pacific. Generally, three size groups have been distinguished on the basis of the mantle length (ML) of an adult.

Intersex related gene expression profiles in clams Scrobicularia plana : molecular markers and environmental application [PDF]

open access: yes, 2015
Intersex, the appearance of female characteristics in male gonads, has been identified in several aquatic species. It is a widespread phenomenon in populations of the bivalve, Scrobicularia plana, from the southwest coast of the U.K.

Biophysical characterization of chitin-binding beak proteins in dosidicus gigas [PDF]

open access: yes, 2020
Carbohydrate-binding proteins (CBPs) are a versatile group of proteins occurring in almost every organism on earth. These proteins are imperative to various functions, ranging from enzymatic carbohydrate degradation and serve as templating scaffolds with load-bearing properties in the exoskeleton of crustaceans or insects. A large amount of data on how

Trophic relationships between the jumbo squid (Dosidicus gigas) and the lightfish (Vinciguerria lucetia) in the Humboldt Current System off Peru

open access: yesScientia Marina, 2011
Acoustic surveys for assessing the biomass and distribution of the jumbo squid (Dosidicus gigas) and the lightfish (Vinciguerria lucetia) were carried out in the Humboldt Current System of Peru in 2007 and 2008.
