Susceptibility of Escherichia coli O157 and non-O157 isolates to lactate [PDF]
To examine the effect of temperature on the antimicrobial efficacy of lactate and propionate against O157 and non-O157 Escherichia coli isolates.Lactate and, to a lesser extent, propionate effectively reduced viability at 37 degrees C. Ethanol enhanced this effect.

Antimicrobial resistance (AMR) is an escalating global threat driven by antimicrobial use in aquaculture and livestock. Resistant pathogens and genes can spread across humans, animals, and the environment through interconnected ecosystems. Using a One Health approach, this review emphasizes antimicrobial stewardship, regulatory strengthening, enhanced ...

Biocontrol of Escherichia coli O157 with O157-Specific Bacteriophages [PDF]
ABSTRACT Escherichia coli O157 antigen-specific bacteriophages were isolated and tested to determine their ability to lyse laboratory cultures of Escherichia coli O157:H7. A total of 53 bovine or ovine fecal samples were enriched for phage, and 5 of these samples were found to contain lytic ...

Pulsed light technology uses short high‐intensity broad‐spectrum flashes (200–1100 nm) to inactivate microbes via DNA damage. It preserves food quality, extends shelf life, and works on liquids, meats, and produce, often combined with other hurdles for enhanced efficacy.

Anti-Biofilm Activities of Manuka Honey against Escherichia coli O157:H7
Manuka honey (MH) has been shown anti-bacterial activity against several pathogenic bacteria. However, the inhibitory effect of MH on biofilm formation by Escherichia coli O157:H7 has not yet been examined. In this study, MH significantly reduced E. coli

Postharvest Survival of Foodborne Pathogens on Strawberry Surfaces at Different Maturity Levels
This study highlights the survival of E. coli and L. monocytogenes on strawberries at different maturity stages and storage temperatures. Predictive microbial modeling revealed temperature‐ and ripeness‐dependent survival trends, emphasizing the importance of temperature control and ripeness in developing effective strategies to enhance strawberry ...
