An algorithm for real-time estimation of Mezcal fermentation parameters based on redox potential measurements [PDF]

open access: yesarXiv, 2006
We present an algorithm for the continuous monitoring of the biomass and ethanol concentrations and moreover the kinetic rate in the Mezcal fermentation process. This algorithm performs its task having only available the on-line measurements of the redox potential.

Critical analysis of data concerning Saccharomyces cerevisiae free-cell proliferations and fermentations assisted by magnetic and electromagnetic fields [PDF]

open access: yesInternational Review of Chemical Engineering (Int Rev Chem Eng.) Vol. 3, n.1, pp. 3-20, January 2011, 2011
The review analyses studies on magnetically assisted proliferations and batch fermentations with Saccharomyces cerevisiae yeasts. The results available in the literature are contradictory and show two tendencies: magnetic field suppression of the cell growth and positive effects in batch fermentation with increasing both biomass and metabolite ...

Greek Protected Designation of Origin Xinomavro Wines: A Deep Dive into Their Chemical Composition and Geographical Origin by Using Ultra High Performance Liquid Chromatography–Trapped Ion Mobility Spectrometry–Quadrupole Time of Flight–Mass Spectrometry

open access: yesAnalysis &Sensing, EarlyView.
Greek protected designation of origin Xinomavro wines are analyzed with ultra high performance liquid chromatography–trapped ion mobility spectrometry–quadrupole time of flight‐mass spectrometry (UHPLC‐TIMS‐QTOF‐MS). Both target and not‐target screening approaches are employed, leading to the identification and quantification of several polyphenols and
