Abstract A simple spectrophotometric assay for free carnitine in milk and supplemented infant formulas has been developed. After acid extraction, carnitine is measured enzymatically through its reaction with carnitine acetyltransferase coupled with acetyl coenzyme A and dithiobenzoate (DTNB).
