A Preliminary Study on Active Chitosan‐Based Edible Films Enriched With Microencapsulated Probiotics for Set‐Type Yogurt Preservation

Chitosan‐based edible films incorporating microencapsulated Bifidobacterium animalis subsp. lactis B94 and Lacticaseibacillus rhamnosus GG were successfully developed and applied as surface coatings for set‐type yogurt. The films maintained high probiotic viability after drying and showed suitable physicochemical and antimicrobial properties.
