Bulletin of the American Society of Papyrologists, 2014 Survey of the use of the singular and plural with Greek words for grain. The original plural gives way to the singular in the course of the Hellenistic period, but the plural reappears in the later Roman period for barley, whereas wheat, for which σῖτος is then used rather than πυρός, occurs in the singular.
