Effect of Potato Variety and Pretreatment Methods on Physicochemical and Sensory Properties of French Fries. [PDF]

French fries prepared from six potato varieties (Belete, Burka, Bubu, Gudane, Dagim, and Jalane) were evaluated under blanching and salt‐soaking pretreatments. Belete and Burka varieties showed the lowest oil uptake and highest consumer acceptance in terms of crispness, color, and overall quality.
