Comparative Study of Refractance Window and Hot Air Drying of Apple Pomace: Kinetics, Modeling, and Utilization in Pancakes

Refractance window drying efficiently valorized apple pomace by significantly reducing drying time and energy consumption while better preserving bioactive compounds compared to hot air drying. The resulting powder showed high functional potential and was successfully used as a sugar and flour substitute in pancakes.

Evolutionary gains and losses of key biosynthetic genes likely resulting from multiple independent evolutionary events explain why certain Nepeta (catnip) species produce both the active, cat‐attracting nepetalactones and sugar‐bound iridoids, while others make only the sugar‐bound forms, and some have lost iridoid production entirely.

Transketolase (TKT) activity provides a functional measure of thiamine status by integrating cofactor availability, enzyme abundance, and catalytic capacity. TKT catalyzes thiamine diphosphate (TDP)‐dependent reactions in the nonoxidative pentose‐phosphate pathway and requires magnesium for optimal activity.
