A high voltage pulse generator for Pulsed Electric Field pasteurization

This paper describes the design and implementation of a pulse generator for food pasteurization. Such generator generates a high voltage (15 kV) square wave with a frequency in the range from 250 Hz to 30 kHz. The high voltage supplies two electrodes where, between them, the food is placed and then pasteurized.

In this paper, a new technique for high voltage measurement for DC and AC systems using a High Voltage Electric Field Motor (HVEFM) is proposed. The rotor speed of HVEFM is linearly proportional to the applied voltage. Therefore, the input voltage can be measured by detecting the rotor speed.
