Incomplete fatty acid oxidation by heart mitochondria: β-Hydroxy fatty acid production
Journal of Molecular and Cellular Cardiology, 1982Abstract Isolated rabbit heart mitochondria oxidizing long-chain acylcarnitine accumulated β-hydroxy fatty acids when the NADH NAD ratio was increased by rotenone treatment. β-Hydroxystearate, -palmitate, and -myristate were measured by gas chromatography/mass spectrometry.

Abstract Seed oils of castor (Ricinus communis) and lesquerella (Physaria fendleri) mainly contain hydroxy fatty acids (HFAs) useful in industrial applications. As castor seeds contain the toxin ricin and lesquerella is not yet a commercial crop, extensive efforts have been directed toward developing safe commercial sources of HFAs in

Biological Effects of Hydroxy Fatty Acids
1985Mammalian cells metabolize arachidonic acid to many different products including a variety of hydroxy fatty acids (1). Most of these hydroxy fatty acids are formed by lipoxygenases. The three most common lipoxygenases are the 5- and 15-lipoxygenases, present in such cells as leukocytes and macrophages and the 12-lipoxygenase which is found in mast ...

Screening the Lactic Acid Bacteria converting Hydroxy Fatty Acid from Unsaturated Fatty Acid
2018Hydroxyl fatty acids (HFAs) are used in widely diverse industrial applications, healthy functional foods, artificial food flavorings, and alcoholic beverages. A lactic acid bacterium (LAB), Lactobacillus sakei, hydroxylates oleic acid. Furthermore, the hydroxyl fatty acid was identified by GC-MS as 10-hydroxystearic acid.
