Scanning electron microscopy (SEM) was used to investigate the microstructure of five cultivars of lentil seeds (Lens culinaris). Lentil cot yledons contain sphericai starch granules surrounded by protein bodies similar to starch granules and protein bodies observed in cotyledons of other food legumes.
