En todos los casos, en el muestreo de fin de fermentación solo se detectó S. cerevisiae. La presencia de Saccharomyces cerevisiae en el mosto, su mejor adaptación y mejor competencia por los recursos del medio, condicionaron la supervivencia de las especies no-Saccharomyces a lo largo de la fermentación alcohólica.
