Characteristics of In Vitro Gastrointestinal Digestion Simulation Apple Juice Fermented by Complex Lactic Acid Bacteria

This study aimed to develop a novel type of nutritious, aromatic apple juice fermented by lactic acid bacteria. High‐acidity and fresh apple juice are mixed at a 1:1 volume ratio and fermented using Lactiplantibacillus plantarum and Streptococcus thermophilus.
