Effects of Cellulose Gums on Rheological Interactions in Binary Mixtures of Xanthan Gum and Locust Bean Gum [PDF]

open access: yesPreventive Nutrition and Food Science, 2018
The effects of cellulose gums (CG), such as carboxymethyl cellulose (CMC) and hydroxypropyl methylcellulose (HPMC), on the flow and dynamic rheological properties of binary mixtures of xanthan gum (XG) and locust bean gum (LBG) were examined at different XG/LBG/CG mixing ratios (50/50/0, 47.5/47.5/5.0, 45/45/10, and 42.5/42.5/ 15.0).

Global hydrodynamic analysis of the molecular flexibility of galactomannans [PDF]

open access: yes, 2008
In the past, intrinsic viscosity and sedimentation velocity analyses have been used separately to assess the conformation and flexibility of guar and locust bean gum galactomannans based on worm-like chain and semi-flexible coil models.

New formulations for low-fat frankfurters and its effect on product quality

open access: yesCzech Journal of Food Sciences, 2004
The effects of reducing fat level (9% and 12%), substituting pork fat with olive oil and adding locust bean/xanthan gum on emulsion stability, jelly and fat separation, cook loss, and hardness of frankfurters were investigated and compared with control ...

Effect of Polysaccharide Compounds on the Stability of Oil-In-Water Emulsions during Storage

open access: yesТехника и технология пищевых производств, 2022
Polysaccharides interact synergistically to form sedimentation-resistant emulsions. However, data on the effect of polysaccharide combinations on oxidative stability are scarce. Sedimentation and oxidative stability are equally important for fat emulsion

Inhalable Antitubercular Therapy Mediated by Locust Bean Gum Microparticles [PDF]

open access: yesMolecules, 2016
Tuberculosis remains a major global health problem and alternative therapeutic approaches are needed. Considering the high prevalence of lung tuberculosis (80% of cases), the pulmonary delivery of antitubercular drugs in a carrier system capable of reaching the alveoli, being recognised and phagocytosed by alveolar macrophages (mycobacterium hosts ...
