ストリングチーズは手で裂いたときに,繊維状組織を示すことが特徴である.そのストリングチーズのマクロ構造を走査電子顕微鏡と光学顕微鏡で観察した. ストリングチーズ中の蛋白質の構造は延伸操作によって,延伸方向に方向性を持ち,脂肪球と水滴はそのなかに配列していた.延伸方向に垂直な断面の構造は互いに分かれる繊維のようでなく,蛋白マトリックスが連続相を作っていた. 手で裂いたときにできる繊維状の組織はストリングチーズ中の脂肪や水の部分が開裂し,延伸方向に配列した蛋白マトリックスが裂けることによって発現すると考えた.
