Characterization of Lipase in Mare Milk

Abstract High lipase activity was in mare milk. This activity had characteristics of a lipoprotein lipase, blood serum dependence, thermolability, and sodium chloride sensitivity. The apparent Michaelis constant of this enzyme was .21m M with activated intralipid triglycerides as a substrate. Lipase activity was not affected significantly by heparin.
