Studies on the Nutritional, Functional, Textural, and Sensory Characteristics of Finger and Barnyard Millet‐Incorporated Nuggets

open access: yesFood Chemistry International, EarlyView.
The graphic illustrates the development of nuggets traditionally known as “wari” prepared with whole green grams and composite flour barnyard millet var. (PRJ‐1) and finger millet var. (VL‐M‐380) in a 1:1 ratio. The addition of millet significantly improved the nutritional value of nuggets, providing higher levels of protein, carbohydrates, fiber ...

The risk of selenium deficiency in Malawi is large and varies over multiple spatial scales

open access: yesScientific Reports, 2019
Selenium (Se) is an essential human micronutrient. Deficiency of Se decreases the activity of selenoproteins and can compromise immune and thyroid function and cognitive development, and increase risks from non-communicable diseases. The prevalence of Se

Bioavailability through lactic fermentation in millet for combating hidden hunger

open access: yesFood Biomacromolecules, EarlyView.
Millets are nutrient‐rich grains with considerable potential to combat hidden hunger, but the presence of anti‐nutritional factors, can restrict mineral bioavailability. Processing strategies including soaking, germination, cooking, and lactic acid fermentation can reduce the anti‐nutritional factors.

Marine Macroalgae as a Safe Healthy Food While Meeting Food Security Challenges Arising From Climate Changes

open access: yesFood Safety and Health, EarlyView.
Planned harvesting and processing of marine macroalgae could meet future global food needs and mitigate fuel‐originated carbon dioxide responsible for climate change. Microalgal foods are nutritious and safe. The utilization of macroalgae would avoid environmental problems arising from the release of overgrowing macroalgae caused by heatwaves, which ...

Neurolathyrism in Sub‐Saharan Africa—Assessing the Neurotoxic Risks of Lathyrus sativus Amid Drought and Food Security Challenges

open access: yesFood Safety and Health, EarlyView.
Representation of grass pea consumption in drought‐stricken sub‐Saharan Africa sustains nutrition, but excess β‐ODAP exposure due to multiple reasons triggers neurolathyrism, a progressive neurotoxic disorder. ABSTRACT Neurolathyrism is a progressive motor neuron disease due to the consumption of Lathyrus sativus (grass pea) over long periods.

Chemistry Underlying the Behavior of Food and Agricultural Components During Industrial Manufacturing Processes and Its Implications in Quality Assurance, Food Quality, and Food Safety Management: A Systematic Review

open access: yesFood Safety and Health, EarlyView.
Industrial manufacturing processes have transformative effects on the components of food matrix. These transformations in food matrix and components have direct implications for quality assurance (QA), food quality (e.g., nutritional profile and texture), and food safety management (e.g., pathogen control and toxin mitigation). ABSTRACT This systematic

Prevalence and Contributing Factors of Household Food Insecurity in Somalia: A Household‐Level Analysis

open access: yesFood Safety and Health, EarlyView.
Graphical abstract illustrating the study design, prevalence, and key contributing factors of household food insecurity in Somalia. ABSTRACT Somalia continues to experience a high burden of household food insecurity driven by recurrent climate shocks, protracted conflict, economic instability, displacement, and limited access to livelihoods and ...

A 2 year retrospective study of vegan patients and their pregnancy outcomes in a tertiary level Irish hospital

open access: yesInternational Journal of Gynecology &Obstetrics, EarlyView.
Abstract Objective Recent previous studies have revealed outcomes of higher risk of low birth weight, small for gestational age, and pre‐eclampsia for vegan pregnant women compared to other diets. This review examined if patients with vegan diet in our tertiary hospital had similar outcomes.
