Neuroprotective Potential of Mung Bean (Vigna radiata L.) Polyphenols in Alzheimer's Disease: A Review.

Mung bean contains various neuroprotective polyphenols, so it might be a healthy food for Alzheimer's disease (AD) prevention. Totally, 19 major phenolic compounds were quantified in mung bean, including 10 phenolic acids and 9 flavonoids.

Ultrasonic treatment was performed on water-extractable polysaccharides from the seed of mung beans. Purified by anion-exchange and gel filtration chromatography, MWP-1' and MWP-2' were obtained. Average molecular weights (Mws) of MWP-1' and MWP-2' were 68.4 kDa, and 52.4 kDa, respectively.

Physicochemical characterization of mung bean starch

Abstract Starch from mung bean (Vigna radiata) was isolated and some of the important characteristics determined. The yield of starch was 31.1% on a whole-seed basis. The shape of the starch granule was oval to round to bean shaped, with granules 7–26 μ m in diameter. Scanning electron micrographs revealed the presence of smooth surfaces.

Deoxyribonucleic acid of mung bean embryonic axes

Abstract A technique is developed for the isolation of highly polymerized DNA from mung bean embryonic axes. The isolated DNA has a buoyant density of 1.694 g/cm 3 , suggesting that it is a nuclear DNA. Using DNA-RNA hybridization technique, about 1 % of the total DNA is found to be hybridizable with ribosomal [ 3 H]RNA.
