Nutritive Value of Composite Dishes [PDF]

open access: yesNature, 1944
IN McCance and Widdowson's analytical tables, "Chemical Composition of Foods", values are given for a series of cooked dishes containing several ingredients. These values were calculated from the composition of the listed ingredients and the (experimentally determined) change in weight on cooking.

3D Soft Hydrogels Induce Human Mesenchymal Stem Cells “Deep” Quiescence

open access: yesAdvanced Healthcare Materials, EarlyView.
Three‐dimensional soft hydrogels mimicking the bone marrow niche induce deep quiescence in human mesenchymal stem cells. Unlike 2D culture, 3D matrices halt proliferation, regulate cell‐cycle and quiescence markers, and downregulate mTORC1 signaling, preserving stem cell phenotype and therapeutic potential ex vivo.

Precision Food Composition Data as a Tool to Decipher the Riddle of Ultra-Processed Foods and Nutritional Quality

open access: yesFoods
Background: Epidemiology supports a link between ultra-processed foods (UPFs) and health, mediated mainly through the clustering of foods with suboptimal nutrient profiles within UPFs.

Additive‐Manufactured, Multifunctional Bioreactor Technology for Dynamic Culture of 3D Bioprinted Tissue Models

open access: yesAdvanced Materials Technologies, EarlyView.
We introduce an additively manufactured bioreactor with a perfusion flow system and integrated temperature and pH sensors for skeletal muscle tissue biofabrication. The bioreactor's performance was evaluated by assessing the viability, spreading of the myoblast cells in a printed scaffold, and contraction of the isolated murine musculi interossei ...

Body composition and nutritional status of active and sedentary elderly people: are gender and age intervening factors?

open access: yesO Mundo da Saúde, 2020
Considering the functional changes and in view of the changes in body composition to which the elderly are exposed, it is necessary to conduct studies that seek to verify the influence of variables such as sex and age on body composition and nutritional ...

Single‐Cell Metabolic Imaging and Digital Scoring of Fat Tissue Remodeling by Label‐Free Metabolic Microscopy

open access: yesAdvanced Science, EarlyView.
Mid‐infrared optoacoustic microscopy (MiROM) acquires lipid‐ and protein‐ associated vibrational contrast in intact fat tissue without dyes, preserving native tissue architecture. Through lateral and axial segmentation, MiROM tracks intrinsic intracellular changes during postnatal remodeling. A quantitative spatial analysis tool (Q‐SAT) maps white‐ and
