Characterization of Arenga pinnata (Palm) Sugar

Sugars identified in Raphia palm wine

Abstract In a study of sugars of Raphia palm wine, eight palm trees of the Raphia hookeri species were tapped. Nine sugars were identified from the palm wine samples. Colorimetric determination of the sugars showed that sucrose, glucose and fructose decreased in concentration during the 22-day period of tapping the Raphia palm trees.
