Behaviour of milk protein ingredients and emulsions stabilised by milk protein ingredients in the simulated gastrointestinal tract : a thesis presented in partial fulfilment of the requirements for the degree of Master of Food Technology, Massey University, Manawatu, New Zealand [PDF]
Milk clotting behaviours in the stomach impact the digestion rates of protein and fat. A variety of milk protein products are applied as functional ingredients in many foods.

Iron-binding fragments from the N-Terminal and C-Terminal regions of human lactoferrin [PDF]
Digestion of lactoferrin with pepsin at pH 3.0 gave an iron-binding half-molecule that represents the C-terminal part of the native protein. Tryptic or chymotryptic digestion of 30%/-iron-saturated lactoferrin yielded the N- and C-terminal half ...

Abstract Diseases of the Gastrointestinal (GI) tract significantly affect the quality of human life and have a high fatality rate. Accurate diagnosis of GI diseases plays a pivotal role in healthcare systems. However, processing large amounts of medical image data can be challenging for radiologists and other medical professionals, increasing the risk ...

Electrospray ionization mass spectrometry (ESI‐MS) combined with thermodynamic modeling provides the first direct characterization of radium speciation in synthetic gastrointestinal biofluids. Free Ra2+ ions predominate with minimal protein binding and negligible EDTA complexation. Crown ethers enable effective Ra complexation.
